Until I spoke to Misha, the owner of this Hackney-based company, I had never heard of sea moss or Chondrus crispus to go by its scientific name.

Sea moss is a type of red algae that grows on the Atlantic coastlines of Europe, North America, and the Caribbean Islands. It is sometimes known as Irish moss or red seaweed and it grows year-round in tidepools and inlets.
